Rooted in l’art de vivre à table—the French art of savoring life around the table—Chef David Chaymol brings together the warmth of Provençal tradition and the sophistication of modern French cuisine. Each dish is a celebration of flavor, artistry, and the joy of gathering.

ABOUT THE CHEF

Chef David Chaymol began cooking at age 14 and trained in prestigious European kitchens, including the two-Michelin-starred Léon de Lyon. His international career spans roles in Anguilla, Los Angeles, and luxury yachts across the Caribbean, Florida, and Europe. In 2000, he opened Bistro de Paris in Puerto Rico, later relocating it near the Museo de Arte and running it for 14 years.

He played key roles at Café La Plage and Art D’Chocolat and, in 2015, launched Niche Bistro, a highly acclaimed French restaurant that topped OpenTable and TripAdvisor.

More recently, he has focused on private events and gastronomic consulting in Tortola. In 2025, he will open Bardot and C’est la Vie rooftop at Hotel O:live in Condado, alongside partner Paco López.

Recognitions include multiple awards from Tables Magazine, SAL, OpenTable, and TripAdvisor—cementing his reputation as a leader in fine French cuisine.
